July 30th “Taste It Now Make It” Recipe
White Wine Braised Chicken
8 Boneless/Skinless Chicken Thighs
2 Cups White Wine
1 Whole Lemon
1 ½ Cup Heirloom Tomato
2 Shallot Bulbs
2 stems of fresh Rosemary
¼ Cup Capers
1 Cup Sweet Peppers (Red, Yellow, Orange)
3tbs olive oil
Salt, Pepper, Tuscan Garlic Seasoning
Homemade Smashed Potatoes
5-6 Medium or large Red Potatoes (Cubed w/ skin on)
¼ cup half & half
3tbs salted butter
3tbs sour cream
Salt
Pepper
Garlic Powder
¼ cup Shredded Parmesan Cheese
Fresh Green Beans
3 Cups Fresh Whole Cut Green Beans
2tbs Olive Oil
Salt, Pepper, Tuscan Garlic Seasonings
Instructions:
Chicken: Season chicken with salt, pepper, and Tuscan garlic seasoning. Pour olive oil into frying pan (get really hot) and sear chicken on both sides for 4-5 mins each. Then add shallots, rosemary, heirloom tomatoes, let braise for approx. 4mins. Add white wine, butter, capers, and lemon juice and let simmer for 25-30 minutes on med-low.
Smashed Potatoes: Cut off butts of potatoes on each side leaving skin. Boil until softened, then drain. Smash potatoes really well, then add half & half, melted butter, sour cream, parmesan cheese, salt, pepper, and blend well.
Green Beans: Pour oil in pan and allow it to get really hot. Rinse green beans, then add to pan. Sprinkle salt, pepper, and Tuscan garlic sear for approximately 8mins.
